欧盟专家组审查了现有的文献认为，无足够证据支持河豚毒素最小致死剂量为2毫克的结论，部分人摄取仅0.2毫克，相当于4微克/千克体重，即可出现严重症状。

 

    经过风险评估，欧盟食品安全局认为，贝肉浓度低于44微克当量TTX / kg不会对人体产生不利影响。液相色谱串联质谱法（LC-MS / MS）最适合检测河豚毒素及其类似物，定量限为0.1-25微克/千克。
