肉桂胶主要由大分子量多糖组成，结构上主要是由1,4-β-d-吡喃甘露糖与1-6-连结的α-d型吡喃半乳糖的直链结构组成。2014年欧盟食品安全局专家组对肉桂胶作为宠物饲料添加剂的安全性发布意见。之前结论认为，只有纯化的半精制肉桂胶才符合宠物食品添加剂的要求。欧盟食品安全局再次评估维持了之前的结论。

    The additive cassia gum consists mainly of high-molecular weight polysaccharides composed primarily of a linear chain of 1,4-β-d-mannopyranose units with 1,6-linked α-d-galactopyranose units. In 2014, the Panel on Additives and Products or Substances used in Animal Feed （FEEDAP） delivered an opinion on the safety and efficacy of cassia gum.
